Summer Avocado Chicken Salad

What’s better than a picnic on a beautiful summer day! Take the opportunity to soak up the sun. Step outside your normal routine by having a picnic with friends. This quick, easy and tasty recipe is perfect for any outdoor event. Have you ever tasted the mouthwatering combination of chicken and avocado? It’s a must.

Avocado Chicken Salad Recipe

Ingredients

  • 1-2 cups of shredded or finely chopped chicken
  • 2 ripe avocados diced
  • ¼ cup chopped onion
  • ¼ cup finely chopped spinach
  • ¼ cup corn (grilled corn tastes incredible)
  • Splash of olive oil
  • Splash of lime
  • Salt and pepper to taste
  • 2 slices of whole wheat bread

Prepare
Start chopping – this is the hardest part! Take the chicken, avocado, onion and spinach and chop to the consistency you prefer. Mix together in a large bowl and add corn. Add a splash of lime and olive oil. Sprinkle salt and pepper on top. Make sure the salad is fairly moist. Put the salad in between two slices of bread and enjoy! Refrigerate leftovers.
