Edamame Hummus Wrap Recipe

When it comes to food, summertime gets us craving fresh, light fares. If you’re craving something quick and light for lunch, look no further than these edamame hummus wraps! They pack a powerful flavor punch and will keep you fueled for your afternoon. This recipe makes enough for two wraps, but you may want to double up on the hummus and store it in your fridge, so you can be ready for a repeat!

Ingredients

  • 2 cups edamame, cooked and shelled
  • 2 tablespoons lemon juice
  • 2 tablespoons extra-virgin olive oil
  • 2 cloves of garlic, crushed
  • ¼ – ½ teaspoon ground cumin (to taste)
  • ¼ teaspoon salt
  • Handful of greens of your choice (spinach, cabbage, or kale are all great suggestions)
  • Vegetable toppings of your choice (we love colorful sliced bell peppers and cubed tomatoes, but feel free to go crazy here!)
  • 2 whole wheat tortillas

Prepare

  1. Combine edamame, lemon juice, extra-virgin olive oil, garlic, ground cumin, and salt in a food processor. Pulse until it reaches desired consistency, adding more water if it’s too thick.
  2. Spread mixture on a whole wheat tortilla. Add greens and vegetables of choice. Roll your tortilla, and enjoy!
